Rudy Wooten is a meat science professor for the animal science department. He earned his bachelor's degree in animal science, a master's degree in animal science and a doctorate degree in agricultural biochemistry and nutrition from the University of Arizona.
Wooten teaches the beginning meats and the general animal science courses
for the department. His focus is on fresh meat processing. He has worked
for the National Cattlemen’s Beef Association as a consultant since
the NCBA was formed. He is a current member of the Beef Value Added Team,
which consists of extensive travel across the United States presenting
information on the improvement of value in cuts coming from the beef round
and chuck.
Wooten enjoys teaching because it allows him to work with the brightest
of the next generation of industry leaders.
“I have learned much more from my students than they have from me,” Wooten
