Bob Delmore teaches meat science courses in the animal science department, including ASCI 211 meats lab, ASCI 384 processed meats lecture and lab, ASCI 415 hazard analysis and critical control point systems and ASCI X425 meat industry study tour.

Delmore earned his bachelor’s degree in food science at Cal Poly, his master’s degree in animal science from the University of Nebraska-Lincoln and his doctorate degree in animal science with a concentration in meat science from Colorado State University.

Delmore serves as an adviser to undergraduate students in the animal science department. Additionally, Delmore provides oversight of both the United States Department of Agriculture inspected harvest and meat processing facilities. These facilities provide “hands-on” learning for students in meat science classes and student enterprise projects. Cal Poly’s meats laboratory harvests and fabricates beef, hogs and lamb for use in classes and retails sales. Other products produced for retail sale include holiday hams, beef jerky, summer sausage, ground beef and Cal Poly linguisa.

Delmore is active in various meat/food/microbiological associations including the American Meat Science Association, Institute of Food Technologists, Southern California Association for Protection and the National Meat Association. Delmore has served as a member and chair of various committees and as a member of the board of directors for the NMA. Delmore’s research interest includes projects in non-meat ingredient functionality in processed meats, post harvest carcass interventions and meat quality.

Delmore received national recognition including Meat Processing Magazine’s Rising Star Distinction in March 2000. He was one of eight meat industry professionals recognized as a rising star in the meat and poultry industry. For their annual rising star article, each year, the editors at Meat Processing ask industry associates and prominent individuals to nominate young people who show the potential to become leaders in the meat and poultry industries.

Most recently Delmore was the vice-president of technical services for the Clougherty Packing Company - Farmer John Meats. The Clougherty Packing Company is a vertically integrated meat processing company with annual sales in excess of $380 million. In this position, Delmore directed all company food safety, microbiology, HACCP systems, quality assurance and research and development.
